You certainly can, but I would still do the broiler step in order to lightly caramelize that last little addition of maple syrup on top. You’d just need less time under the broiler since you’re not browning the skin, and you definitely don’t want to burn the top of the chicken thighs.

You would probably need to cut the cook time down a little bit. We suggest using an internal meat thermometer to help clarify exactly when the chicken is done cooking!

I couldn’t find fresh or frozen cranberries anywhere either! I went ahead and used whole cranberries in sauce for the marinade, and I’m gonna rinse off what’s left for baking. I blended the marinade without the maple syrup and it was sweet enough. If you want to integrate something fresh, you can try pomegranate juice/arils.
